Advanced Preparation for “Vegan Keto”

1 - 2 days prior [optional], Tofu, regular, extra firm 2 1/2 block (12oz) [for Basic Crispy Tofu on Mon]
Instructions:

Remove the tofu from its packaging. Line a plate with a folded paper towel, set the tofu on top, and cover with another folded paper towel. Set a small plate on top of the tofu and weigh it down with something heavy, like a can (see picture). Press for 30 minutes or up to 8 hours. You will see liquid collect around the tofu.

1 - 5 days prior [optional], Extra virgin olive oil 10 tbsp [for Herbal Kale Salad (vegan keto) on Mon]
Instructions:

Combine all dressing ingredients in a glass jar and shake well.

1 - 3 days prior [optional], Red lentils, raw 1 cup [for Indian Inspired Butter Lentils (vegan keto) on Mon]
Instructions:

Cook your lentils in vegetable broth according to package instructions.
