This 7 day meal plan provides an average of about 1000 calories per day. Focuses on variety of seafood, fruits and vegetables. Breakfasts during the week were designed to be quick and fit a "grab and go" model. Lunch for Monday - Friday is meal prep style, meaning one large batch can be prepared on Sunday and then divided out into 5 meals for lunches throughout the week. I tried to include a variety of recipes for dinners and weekend lunches, feel free to just pick a few of these each week if making several different recipes in one week seems overwhelming!
