Ingredients for 2

1/8 tsp Black pepper
1/4 cup Bulgur, dry
1/3 cup chopped Cucumber, peeled (seeded)
1/2 tbsp Extra virgin olive oil
3/4 clove(s) Garlic (minced)
1/8 cup Green onion, scallion, ramp (chopped)
3/4 tbsp Lemon juice
1/10 cup Mint, fresh (chopped)
1/4 cup Parsley, fresh (chopped)
1/8 tsp Salt
3/4 cup chopped Tomato
1/4 cup Water (boiling)

Instructions


Combine bulgur and 1 cup boiling water in a medium bowl. Cover and let stand 30 minutes or until tender. Stir in juice, oil, and garlic. Cool to room temperature.

Combine bulgur mixture, tomato, and remaining ingredients in a large bowl; toss gently to coat.
