4 thigh(s) Chicken thighs, with skin
1 tbsp Italian herb seasoning, McCormick
1 tbsp Extra virgin olive oil
1 dash Salt and pepper (to taste.)
180 gm Cremini (Italian) mushroom (thinly sliced; or whatever mushrooms you like)
3 medium slice Bacon (cubed)
1/4 cup Heavy cream, 38% M.F.
1/4 cup Water, filtered
2 sprig Thyme, fresh


  1. Preheat the oven to 180ºC / 350ºF / Gas Mark 4
. Season the chicken thighs generously with salt and pepper and the Italian herb seasoning mix.
  2. Heat the oil over a medium–high heat in a large frying pan. Add the chicken thighs, skin side down, and cook for about 5 minutes until browned.
  3. Transfer the chicken, skin-side up, to a foil-lined baking tray and roast for 20 minutes or until completely cooked through and no longer pink in the centre.
  4. Meanwhile, make the sauce. Fry the bacon in a medium pan over medium high heat. Add the mushrooms to the bacon fat and cook for 3 minutes. Add the cream, water, salt and thyme. Bring to the boil, stir, then reduce the heat to very low. Simmer for about 2 minutes. Taste and add more salt if necessary.
  5. Add the cooked chicken to the pan and spoon the sauce and mushrooms over the top. Serve with your choice of roasted/steamed greens.
