1 1/2 cup Baby spinach
1 1/2 cup Arugula
1 cup Quinoa, cooked
1 breast Chicken breast, boneless, skinless (diced)
1 beet(s) Beets, raw (grated, steamed, or roasted)
1 stalk(s) Green onion, scallion, ramp (finely sliced)
2 tbsp Goat cheese, semi-soft
1 tbsp Walnuts
1 tbsp Extra virgin olive oil
1 tbsp Balsamic vinegar
1 pinch Salt and pepper


Layer the ingredients, with lettuce on the bottom. Drizzle oil and vinegar over salad.
