Ingredients for 1

1/4 cup slices Sweet onion
1/2 cup chopped Carrots
1 1/2 cup Broccoli florets
1/2 cup shredded Red cabbage
1/2 cup Green cabbage
1/2 cup slices Bamboo shoots, canned
1/2 cup Radish (quartered)
1/8 cup Peanuts
10 medium Shrimp, raw
1/2 tbsp Canola oil
1 tbsp Fish sauce

Instructions


Add oil to med high skillet and cook shrimp 2-3 mins per side. Set aside.

Add onions, carrots, broccoli, cabbages to same skillet and saute over med high heat for about 10 mins (veggies retain some crispness).

Add bamboo shoots for the last few minutes.

Serve in large bowl and top with shrimp, peanuts and radishes. Serve and enjoy all the goodness you are eating!
