1/4 small Yellow onion (sliced)
1/4 medium pepper(s) Red bell pepper (long slices)
1/4 tbsp Garlic powder
1/4 tbsp Chili powder
1/8 tbsp Paprika
1/8 tbsp Cumin
1/4 tbsp Oregano, dried
1/4 tsp Salt
1/8 tsp Black pepper
0.03 tsp Crushed red pepper (optional)
114 gm Chicken breast, boneless, skinless
1/8 cup Chicken broth (stock), low sodium
1/4 medium pepper(s) Green bell pepper (long slices)
1/2 cup Quinoa, cooked


Spray crockpot with cooking spray.

Mix together broth, oil and seasonings. Mix all ingredients together in large bowl to coat the chicken and veggies.

Lay chicken breasts at the bottom. Cook on low 6-8 hours or on high 4-6 hours.

Once chicken is cooked, remove from crockpot and shred with two forks. Return to crockpot and mix with veggies.

Serve over cooked quinoa.
