2/3 cup Egg white
1/8 cup Oats, instant, dry
1/8 cup Frozen spinach (or fresh)
1/8 cup Salsa, ready-to-serve, low sodium, hot/medium
1/10 cup shredded Swiss cheese, low fat
10 gm Turkey bacon, raw
1/8 tsp Paprika, sweet
1/8 tbsp Basil, fresh (or dried)

Instructions


Spray 2-3 muffin tins with non-stick cooking spray. Preheat oven 400 degrees F.

In a blender, add egg whites, salsa, basil, spinach, cheese and oats and blender on low.

Pour batter into muffin tins. Top with chopped turkey bacon then sprinkle paprika.

Bake for 10-15 minutes depending on size of muffin tins.
