1/2 large Carrots (peeled, shredded)
1 stalk(s) Green onion, scallion, ramp (thinly sliced)
1 tsp Hot sauce (for dressing)
29 gm Japanese noodles, soba, cooked
1/2 tbsp Peanut butter, smooth (for dressing)
1/4 medium pepper(s) Red bell pepper (thinly sliced)
1 tsp Rice vinegar (for dressing)
1/4 tbsp Sesame seeds, black (for dressing)
1 tsp Soy sauce, low sodium (for dressing)
114 gm Chicken breast, boneless, skinless, grilled (cubed)

Instructions


In a large pot of boiling water, cook noodles according to package instructions. Rinse under cold water and drain.

Meanwhile, make Spicy Peanut Dressing: In a small bowl, whisk together peanut butter, hot sauce (sambal oelek), rice vinegar and soy sauce. Stir in sesame seeds.

Divide Spicy Peanut Dressing equally among 4 pint-sized mason jars.

Divide soba noodles over dressing. Layer remaining ingredients, ending with chicken. Top with lids and refrigerate up to 5 days.

To serve, pour onto plate or bowl, stir and enjoy.
