4 jumbo egg Egg white
1/4 cup Frozen spinach (or fresh)
1 tbsp Salsa, ready-to-serve, low sodium, hot/medium (or hot sauce)


Scramble egg whites in a bowl with a pinch of salt and pepper. Spray skillet with non-stick cooking spray and pour egg whites into skillet and place a layer of spinach over eggs. Cook on low; flip one side of egg over the other once it is no longer runny.

Top with salsa and fat free cheese (opt.).
