Preheat your oven to 425°F.. Season both sides of chicken with salt and pepper. Place chicken pieces in a zip-top plastic bag along with olive oil (and other desired spices). Seal the bag and shake everything around until mixed.
Place chicken in an oiled baking dish and bake for about 20 minutes, or until the internal temperature reads 165°F.. Take out of oven, cover the dish and let is sit 5-10 minutes to allow the juices to redistribute throughout the meat. Serve with many veggies!
