2 fillet (100g) Atlantic salmon, wild
1/3 tsp Sea salt (for fish)
1/3 tsp Black pepper (for fish)
2 tbsp Sesame seeds (for fish)
2/3 mango Mango (salsa - 1 1/2 cups finely diced)
1/8 small Red onion (salsa - about 3 tbsp., minced)
1 tbsp Parsley, fresh (salsa - minced)
1/10 tsp Sea salt (salsa)
1 tbsp Extra virgin olive oil (salsa)


Preheat oven to 400°F.

Place fillets on a baking sheet lined with parchment paper.

Season each fillet with a pinch of salt and pepper. Cover with sesame seeds and set aside.

In a small bowl, combine the salsa ingredients and mix well. Refrigerate for about 15 minutes.

Place salmon in the oven and bake for 10-12 minutes. Serve with mango salsa.
