Ingredients for 2

2 cup Kale (chopped)
1/2 beet(s) Beets, raw (julienned)
1/2 large Apple (julienned, cut into match sticks or chopped)
1 tbsp Pumpkin seeds
1 tbsp hulled Sunflower seeds
1 1/2 tbsp Goji berries
1/8 cup Walnuts (chopped)
1/8 cup Extra virgin olive oil (dressing)
1/8 cup Apple cider vinegar (dressing)
1 tbsp Dijon mustard (dressing)
1/2 tbsp Honey, raw (dressing)
1/2 pinch Sea salt (dressing)

Instructions


In a large bowl, add chopped kale, drizzle with a little bit of olive oil (approximately 1 tsp) and massage until tender.

Don't skip this part- kale loves a little rubdown and it makes it much tastier.

Add remaining salad ingredients to massaged kale and toss until combined.

For the dressing: Combine all ingredients in small bowl and whisk until well combined. Optionally you can add dressing ingredients to a small blender and give it a few zips or toss them in a small mason jar and shake it like a polaroid.

Drizzle dressing over salad mixture, toss until lightly coated and eat it!
