Avocado Toast with Eggs, Spinach and Tomatoes

1/2 tbsp chopped Shallots
1 cup Spinach
1 medium egg Egg
1 pinch Himalayan sea salt
1 dash Black pepper
1 slice Whole grain bread
1/2 avocado(s) Avocado
1 slice Tomato
1 tsp Extra virgin olive oil

Instructions


Heat oil in a medium skillet. Add the shallot and spinach and cook over medium heat until
spinach is wilted. Place in a small bowl and set aside.

Add drop of oil. Pour beaten egg into the pan and season with salt and pepper. Cook over medium heat until set, about 2 minutes.

Mash the avocado with a fork and spread evenly on piece of toast. Top the avocado toast with spinach, scrambled eggs, and tomato slices. Season with salt and pepper, to taste. Enjoy immediately.
