1 fillet (100g) Atlantic salmon, wild
1/4 tsp Cumin
1/4 tsp Chili powder
1/2 tsp Paprika
1/10 tsp Ginger, dried
1/8 tsp Salt
1/10 tsp Black pepper
1/10 tsp Cayenne pepper
1/4 tbsp packed Brown sugar
1/2 mango Mango (ripe, cut into chunks)
1/4 cup Cherry Tomatoes (chopped)
1/4 medium pepper(s) Jalapeno pepper (finely diced)
1/2 clove(s) Garlic (minced)
1/4 medium Red onion (finely diced)
0 from 1 lime Lime juice
1/4 tsp Granulated sugar
1/8 cup Cilantro (coriander)

Instructions


For the fish:

Combine all the ingredients except for the salmon. Rub the salmon down with the combined spices- cumin, chili powder, paprika, ginger, salt, pepper, cayenne, sugar. There is no need to rub down the skin side if you have skin. Broil the salmon in the oven for about 7 minutes or until it flakes with a fork.

For the salsa:
In a bowl combine, mango, tomatoes, jalapeno, garlic, onion, lime juice, sugar, cilantro, salt and pepper to taste and mix well. Serve over salmon with rice.

Note: This is even better on the grill!
