For the fish:
Combine all the ingredients except for the salmon. Rub the salmon down with the combined spices- cumin, chili powder, paprika, ginger, salt, pepper, cayenne, sugar. There is no need to rub down the skin side if you have skin. Broil the salmon in the oven for about 7 minutes or until it flakes with a fork.
For the salsa:
In a bowl combine, mango, tomatoes, jalapeno, garlic, onion, lime juice, sugar, cilantro, salt and pepper to taste and mix well. Serve over salmon with rice.
Note: This is even better on the grill!
