|3 cup||Chicken broth (stock), low sodium|
|1/2 tbsp||Extra virgin olive oil|
|1 clove(s)||Garlic (chopped)|
|1/2 cup||Lentils, raw|
|1/2 medium potato||Sweet potato (cut into 1/2-inch pieces)|
|1 cup slices||Turkey sausage (Kielbasa) (casing removed)|
|1/2 onion(s)||Sweet onion (chopped)|
|1/2 bunch||Black kale|
Heat oil in large pot over med-high heat. Add sausage and cook until browned- about 8-10 mins.
Add onions and cook- about 3-5 mins. Add garlic and cook- about 1 min. Add broth, kale, sweet potatoes, and lentils.
Bring to boil, reduce heat and simmer until lentils and sweet potatoes are tender- about 30-35 mins.
