Nutritive Sweet Potato Brownie - Guilt Free!

1/8 medium potato Sweet potato (Grated)
1/4 medium egg Egg
1/10 tbsp Vanilla extract, pure
0.04 cup Honey (preferably raw)
0.04 cup Coconut oil (.melted. Can also use olive oil)
1/10 tbsp Baking powder
1/10 cup Cocoa powder, unsweetened
1/8 tbsp Coconut flour

Instructions


Preheat oven to 365 degrees F.

Combine the sweet potato, eggs, vanilla, honey, and oil in a large bowl. In a smaller bowl, combine the baking powder, baking soda, cocoa powder and coconut flour and stir. Stir this into the wet mixture until well combined.

Line a 8×8 cake pan with parchment paper or liberally coat pan with coconut oil. Spread the batter in the pan, and bake for 25-30 minutes. Brownies are done when a toothpick inserted in the centre comes out clean. Be careful not to over bake!

Allow the brownies to cool before removing from the pan.
