1 1/2 cup Chicken broth (stock), low sodium
1/4 tbsp Extra virgin olive oil
1/2 clove(s) Garlic (chopped)
1/4 cup Lentils, raw
1/4 medium potato Sweet potato (cut into 1/2-inch pieces)
1/2 cup slices Turkey sausage (Kielbasa) (casing removed)
1/4 onion(s) Sweet onion (chopped)
1/4 bunch Black kale


Heat oil in large pot over med-high heat. Add sausage and cook until browned- about 8-10 mins.

Add onions and cook- about 3-5 mins. Add garlic and cook- about 1 min. Add broth, kale, sweet potatoes, and lentils.

Bring to boil, reduce heat and simmer until lentils and sweet potatoes are tender- about 30-35 mins.
