Ingredients for 1

1 cup shredded Chicken, cooked (leftover from meal prep. Leave crispy skin on)
1/2 tbsp Greek yogurt, plain, 5% M.F., Liberte
1/2 tsp Dijon mustard
1/2 tbsp Hot sauce (depending on how hot you like it.)
1/2 dash Black pepper (to taste )
1/2 small Carrots (diced)
1 large stalk(s) Celery (diced)
1/8 cup Leek (diced)
1 1/4 cup Lettuce, romaine (sliced)
1/2 tbsp Extra virgin olive oil
1/2 tsp Apple cider vinegar
1/2 pinch Sea salt
1/4 medium pepper(s) Red bell pepper (diced)
1/2 cup Sweet potato (roasted, from meal prep)


In a mixing bowl combine sliced chicken, carrots, leeks, celery and red pepper. Add yogurt, hot sauce , mustard and black pepper. Mix to combine and spoon onto plate.

Slice the lettuce and dress with olive oil, salt and apple cider vinegar. Mix to combine and add to plate.
