Baked Oysters "Lynnafellar"

If you aren't a fan of raw oysters, try them baked! Oysters are high in vitamin B-12, zinc, iron, and only 10 calories per piece!

Ingredients for 2

1 1/3 medium slice Bacon (finely diced)
2/3 medium leek(s) Leek (white part only, finely diced)
1 1/3 cup Spinach
1/8 cup Heavy cream, 38% M.F.
1/8 cup Vegetable stock/broth, low sodium
2/3 dash Salt and pepper (freshly ground)
8 medium Oyster (shucked; see "Notes" below)
2 tbsp Parmesan cheese, grated (freshly grated)


  1. Shuck the oysters (see "Notes" below for easy information on how to prepare oysters).
  2. Preheat the oven to 350°F. In a skillet over medium-high heat, render the bacon until crisp and golden brown.
  3. Add the leeks and cook until soft.
  4. Add the spinach, cream, and stock and cook until the sauce thickens. Season with salt and pepper. 
  5. Place 1 oyster on each shell. Top with a spoonful of the creamed spinach.
  6. Place the oysters on a baking sheet and top each oyster with Parmesan. Bake for 5 minutes.
