Ingredients for 2

2 large egg Egg
1 medium Banana
1/2 cup Almond butter
1/2 tbsp Coconut oil


In a large mixing bowl, beat eggs, bananas, and almond butter until evenly combined.

Heat a large skillet with 1 tbsp coconut oil over medium heat.

Scoop batter from bowl using serving size spoon.

Cook for about 4 minutes, flipping when bubbles start to form on top of the batter.

Cook for an about 4 minutes more until pancakes are slightly browned and fully cooked.

Continue cooking two to three pancakes at a time until all the batter is used.

Top as desired and serve.

Topping ideas: 1/4 cup walnuts, 1 tsp shredded coconut and 1/4 cup fresh berries
