1 cup Spinach
1 large egg Egg (hard boiled, cut into quarters)
1/2 tbsp Roquefort (blue) cheese (crumbled)
1/4 cup Cherry Tomatoes (halved)
1/2 large egg Egg yolk (for dressing)
1/2 tbsp Dijon mustard (for dressing)
1/8 tsp Sea salt (for dressing)
2 tbsp Lemon juice (for dressing)
1/8 cup Extra virgin olive oil (for dressing)
1/4 tsp Black pepper (for dressing)
1 slice Turkey bacon, cooked

Instructions


Combine salad ingredients in a large bowl.

Blend egg yolk, mustard, salt, lemon juice, pepper in a food processor or blender until smooth. Slowly add oil until emulsified.

Serve and enjoy!
