1/2 avocado(s) Avocado (ripe)
1/4 medium Banana (ripe)
1/3 cup Coconut cream
1/2 tbsp Lime juice
1/4 tsp Lime peel (zest)
1/2 tbsp Vanilla extract, pure
43 gm Raspberries (fresh)
29 gm Pecans (roasted)


  1. 1 Mix avocado, banana, coconut cream, lime and half of the vanilla in a small bowl using ann immersion blender or just a fork.
  2. 2 Mix the berries with the remaining vanilla in a separate bowl.
  3. 3 Fill nice glasses or dessert bowls with alternating layers of the two mixtures.
  4. 4 Place a frying pan over medium high heat and add the nuts. Roast until golden brown. Stir frequently to avoid burning.
  5. 5 Top the dessert with roasted nuts and serve.
