Ingredients for 3

1/3 tsp Cumin
1/3 tsp Coriander, ground
1 1/8 tbsp Canola oil
1 1/2 tbsp Lime juice (fresh)
3/4 tsp Lime peel (zest)
3/4 clove(s) Garlic (minced)
1 1/2 medium ear Grilled corn
1 1/2 cup Cherry Tomatoes (halved)
1/10 medium Red onion (thinly sliced)
1/4 cup Kalamata olives (pitted)
3/4 head Lettuce, romaine (shredded)
2 1/4 medium egg Egg, hard boiled (quartered)

Instructions


In small bowl, whisk together cumin, coriander, canola oil, lime juice, lime zest and garlic. Set aside.

In large bowl, gently combine corn, tomatoes, onion, olives and vinaigrette.

Divide lettuce among four plates; top with salad and garnish with egg.
