Ingredients


567 gm Vegetable mix, chopped (2x 10 oz package frozen steamable packs)
1 cup shredded Chicken, cooked
241 gm Brown rice, short-grain, cooked (cook as per package directions)
1 tbsp Lemon and Herb Seasoning, McCormick
1 tsp Salt

Instructions


1. Cook steamed veggies according to package. Drain excess water.

2. Combine veggies with chicken, rice, seasoning, and salt. Mix well.

3. Divide among 4 containers, allow to cool then refrigerate until ready to eat.

 

To cook chicken:

  • Preheat oven to 400F
  • Season chicken breast with olive oil, salt and pepper or other seasoning of choice
  • Place on a greased baking tray
  • Bake for 22-26 minutes or until internal temperature of chicken breast is 165F
  • Remove from oven and let sit for 5 minutes
  • Using 2 forks, shred the chicken
