Ingredients


1 1/2 large Banana (s) (ripe to overripe)
2 large egg Egg
1/8 tsp Baking powder

Instructions


1. In a mixing bowl,  whisk eggs and baking powder to combine

 

2. In another bowl, mash in bananas lightly with a potato masher or a fork. There should be chunks of bananas to make fluffy pancakes

 

3. Pour wet mixture into mashed bananas and stir to combine

 

4. Heat a frying pan over low-medium heat. Add 1-2 Tbsp batter to the pan. Once you see bubbles around the edges of the pancake, flip and cook for another minute

 

Serve immediately

Toppings

This is where you can get creative! The list is really endless:

Bananas, Blueberries, Raspberries, Strawberries, Apples

Grass-fed butter, Maple syrup, Honey, Coconut whip cream, Coconut butter

Slivered almonds, Nut/seed butter
