An easy to make, garlicky roasted chicken.

1 medium/large bird Whole Chicken
1 pinch Salt
1 dash Black pepper
2 tbsp Extra virgin olive oil
1/2 cup Extra virgin olive oil
10 sprig Thyme, fresh
40 clove(s) Garlic

  1. Preheat oven to 350 degrees F.  Make ready a dutch oven that is tall enough to enclose the chicken.
  2. Plate chicken on a large plate.  Sprinkle salt and pepper over the entire chicken.  Then, pour 2 tablespoons olive oil over chicken and rub all over.  Wash your hands thoroughly.
  3. Heat a wide frying pan over high heat. Once hot, brown the chicken by placing all sides on the pan for a few minutes until brown. Remove from heat.
  4. Add remaining oil, thyme, and garlic cloves to the dutch oven.  Then add the chicken.  Cover and bake for 1.5 hours in the oven.
  5. Check the temperature of the chicken by using a meat thermometer.  It should be no less than 75 degrees Celsius.
  6. Remove chicken from the oven, let rest for 5 to 10 minutes.  Carve, and serve.
