1/2 cup Sweet potato purée, canned (or homemade)
1/2 cup mashed Banana (s)
4 large egg Egg
1/2 tsp Baking powder
1 tsp Cinnamon
1 tbsp Coconut oil (any oil)


  1. Place cooked sweet potato, banana, egg, baking powder, and cinnamon in a blender and blend until smooth. Alternatively, you can whisk the ingredients together very well in a bowl. Make sure the sweet potato and banana are well mashed before you do this.
  2. Gently heat oil in a pan over medium-low to low heat.
  3. Pour ⅛ cup batter or less for each pancake into the pan (you can do 2 at a time). Allow the pancake to cook completely, until you see bubbles around the edges, about 5 minutes.
  4. Gently lift the edges of the pancake all around with a spatula and then flip the pancake. Cook on the second side for 2-3 more minutes.
  5. Repeat until you've cooked all the pancakes. This recipe will make 12-24 small pancakes, depending on how small you make them.
