Ingredients


4 individual package Ramen noodle, dry (gluten free, or noodles of your choice)
1 cup Water
1 piece, 1/2-inch Ginger root (or to taste)
1 cup Vegetable stock/broth
1 clove(s) Garlic (minced)
1 cup Oyster mushroom (chopped (or mushrooms of your choice)
4 stalk(s) Green onion (chopped)
2 tbsp Tamari, gluten free, reduced sodium
1 tbsp Sesame oil
1 cup Frozen green peas (or fresh)
1 medium stalk(s) Celery (sliced (or use fenel)
1 medium Carrots (grated or sliced)
1 medium head Red cabbage (sliced thin)
3/4 cup Bean sprouts

Instructions


  1. Get the noodles cooking according to the directions.
  2. Meanwhile, in a soup pot the olive oil and saute the garlic & then add all the veggies, except the bean sprouts & scallions .
  3. Next add the water, tamari, & veggie broth & bring to a low boil.
  4. Finally add the cooked noodles, dark sesame oil & top with the scallions


            Serve and enjoy!
