Ingredients


1/8 tsp Black pepper (to taste)
2 cucumber(s) Cucumber (sliced)
2 tbsp Olive oil
1 tsp Oregano, dried
1/8 tsp Salt (to taste)
3 medium Tomato (diced)
3 tbsp Vinegar, white
1/2 large Yellow onion

Instructions


To make the dressing:
Add all ingredients to a small bowl and whisk to combine.

Slice the cucumbers and onion. Dice tomatoes, removing excess juice. Place in a bowl. Add the dressing and toss to coat. Add salt and pepper to taste if needed.

It is best if allowed to refrigerate for at least an hour to let the flavours combine.
