3 medium Tomato (diced)
1/2 large Yellow onion (diced)
1 tsp Oregano, dried (for dressing)
2 tbsp Olive Oil, Extra Virgin (for dressing)
3 tbsp Vinegar, white (for dressing)
1 dash Black pepper (for dressing, to taste)
1 dash Salt (for dressing, to taste)


  1. Slice the cucumbers and onion and dice tomatoes, removing excess juice. Place in a bowl.
  2. Prepare the dressing: Add all ingredients to a small bowl and whisk to combine.
  3. Add the dressing and toss to coat. Add salt and pepper to taste if needed.
