1 cup | Adzuki beans, raw |
6 cup | Water, filtered |
2 can(s) (13.5 oz) | Coconut milk, sweetened (full fat) |
10 medium | Jujube (red dates) |
1 cup | Jackfruit (fresh or canned) |
1/2 cup | Sweet potato |
1/2 cup | Coconut sugar |
Bring a large pot of water with 6 cups of water to a boil
Once at a boil, add the adzuki beans to the pot. Let the beans boil for 15-20 minutes
Meanwhile, chop the sweet potato into 1 cm cubes
Reduce to medium heat then add the coconut milk, jujubes, jack fruit, sweet potato and coconut sugar to the pot
Keep on medium heat for another 20 minutes, stirring occasionally.
Serve warm
Soak in filtered water overnight to reduce cooking time. Rinse and drain.
