1 cup Adzuki beans, raw
6 cup Water, filtered
2 can(s) (13.5 oz) Coconut milk, sweetened (full fat)
10 medium Jujube (red dates)
1 cup Jackfruit (fresh or canned)
1/2 cup Sweet potato
1/2 cup Coconut sugar

Instructions


Bring a large pot of water with 6 cups of water to a boil

Once at a boil, add the adzuki beans to the pot. Let the beans boil for 15-20 minutes

Meanwhile, chop the sweet potato into 1 cm cubes

Reduce to medium heat then add the coconut milk, jujubes, jack fruit, sweet potato and coconut sugar to the pot

Keep on medium heat for another 20 minutes, stirring occasionally.

Serve warm

1 - 1 days prior, Adzuki beans, raw 1 cup
Instructions:

Soak in filtered water overnight to reduce cooking time. Rinse and drain.
