Ingredients


4 medium slice Bacon (gluten free Greenfield Natural Meat Co, at Foodland in Haliburton)
4 medium Egg (pastured)
1 tbsp Coconut oil
1 avocado(s) Avocado (sliced optional)
1 pinch Sea Salt (to taste, for dressing)

Instructions


  1. Pan fry the bacon over medium heat until cooked but not charred, about 4 minutes each side. Set aside, and reserve the bacon fat for a later meal. 
  2. Clean the pan and return to medium heat. Add oil, then eggs. Fry the eggs until the white cooks.
  3. Tilt the pan so the coconut pools. Spoon the coconut over the eggs until the white on the top cooks. 
  4. Plate the eggs, sliced avocado, and bacon. Add sea salt to taste and serve.
