| 2 fillet (6oz) | Atlantic Cod (wild-caught) |
| 1/3 cup | Almond flour/meal, Bob's Red Mill (can grind almonds into flour) |
| 1/4 tsp | Garlic powder |
| 1/4 tsp, ground | Thyme, dried |
| 1 medium | Egg |
| 1 whole lemon(s) | Lemon juice |
| 1/2 tsp | Himalayan sea salt |
| 1/4 tsp | Black pepper (organic) |
Preheat oven to 425. Prepare a baking dish with parchment paper.
Combine the almond meal and seasonings in a shallow bowl.
Combine the egg and lemon juice.
Dredge each fish fillet in the egg/lemon mixture, then coat with almond mixture. Place on the parchment paper.
Bake for 15-20 minutes, depending on thickness. Fish should flake easily with a fork.

Variation: Use halibut, salmon, snapper, or other fish.
