2 fillet (6oz) Atlantic Cod (wild-caught)
1/3 cup Almond flour/meal, Bob's Red Mill (can grind almonds into flour)
1/4 tsp Garlic powder
1/4 tsp, ground Thyme, dried
1 medium egg Egg
1 whole lemon(s) Lemon juice
1/2 tsp Himalayan sea salt
1/4 tsp Black pepper (organic)


Preheat oven to 425. Prepare a baking dish with parchment paper.

Combine the almond meal and seasonings in a shallow bowl.

Combine the egg and lemon juice.

Dredge each fish fillet in the egg/lemon mixture, then coat with almond mixture. Place on the parchment paper.

Bake for 15-20 minutes, depending on thickness. Fish should flake easily with a fork.

Serve and enjoy!

Variation: Use halibut, salmon, snapper, or other fish.
