|2 fillet (6oz)||Atlantic Cod (wild-caught)|
|1/3 cup||Almond flour/meal, Bob's Red Mill (can grind almonds into flour)|
|1/4 tsp||Garlic powder|
|1/4 tsp, ground||Thyme, dried|
|1 medium egg||Egg|
|1 whole lemon(s)||Lemon juice|
|1/2 tsp||Himalayan sea salt|
|1/4 tsp||Black pepper (organic)|
Preheat oven to 425. Prepare a baking dish with parchment paper.
Combine the almond meal and seasonings in a shallow bowl.
Combine the egg and lemon juice.
Dredge each fish fillet in the egg/lemon mixture, then coat with almond mixture. Place on the parchment paper.
Bake for 15-20 minutes, depending on thickness. Fish should flake easily with a fork.

Variation: Use halibut, salmon, snapper, or other fish.
