Almond Crusted Salmon Salad (HFLC)

1/4 cup whole Almonds, raw (chopped)
3 tbsp Extra virgin olive oil
1 fillet (4oz) Atlantic salmon, farmed
1 pinch Salt and pepper
2 cup Lettuce, romaine (or whatever green you prefer)
1 tbsp Red wine vinegar
3 medium Radish (thinly sliced on mandolin)
1/4 cup Cucumber (sliced)


  1. Preheat oven to 400°F. Brush salmon with oil 1 tbsp oil and season with salt and pepper.
  2. Chop almonds and sprinkle over salmon.
  3. Bake for 12-15 mins (until fish is opaque in centre).
  4. Sprinkle radishes and cucumbers over greens and place salmon over top. Pour on 2 tbsp extra virgin olive oil and 1 tbsp red wine vinegar.
