These pancakes are a wonderful substitute for regular pancakes when you are watching your carbs! They are very filling and fluffy.
Ingredients
2 cup
Almond Flour
3/4 cup
Coconut milk, sweetened
(unsweetened or use milk or buttermilk)
4 large
Egg
2 tbsp
Butter, unsalted
(melted, plus more for the pan)
2 tsp
Maple syrup
1 tsp
Vanilla extract, pure
1 tsp
Orange juice
3/4 tsp
Baking soda
1 dash
Salt
Instructions
Process all ingredients in a blender until smooth.
Lightly grease a griddle or large non-stick pan with additional butter over medium heat.
Place 3 tablespoons of batter onto the heated pan. Cook for 3-5 minutes on each side or until golden brown underneath and batter is slightly bubbly. Flip over and cook for an additional 3-5 minutes. Repeat with the remaining batter.
Notes:
Optional: Top with plain greek yogurt and/or your favorite fruits (suggestions: strawberries, blueberries, raspberries, bananas).
