Amazing Mashed Cauliflower

This creamy mashed cauliflower is hard to stop eating! A mashed potato copycat that tastes just as good, has amazing flavor and takes a fraction of the time!

Ingredients


8 cup pieces Frozen cauliflower (https://www.birdseye.com/product/cauliflower-4/)
4 tbsp Butter, grass-fed, salted (more to taste/texture)
1 block Cream cheese
1 tbsp Salt (to taste)
3 tsp Black pepper (to taste)

Instructions


Cook cauliflower as directed on bag (usually with a small amount of water on the stovetop.) Cook until very tender.

Remove from stove and let cool for 2-3 minutes. Add cauliflower, butter, cream cheese, and salt & pepper to blender or NutriBullet. Blend until smooth. Keep warm until you serve! This might be the last item you prepare because it only takes a couple of minutes and should be served warm!

Notes:

48 ounce bag of frozen cauliflower - Birds Eye: 

2 servings = 10 oz cauli, 2 TBSP butter, 2 TBSP CC

10 servings = 50 oz cauli, 10 TBSP butter, 10 TBSP cream cheese
