Apple, Ginger, and Pumpkin Soup

1 tbsp Coconut oil
1 medium Apple (chopped)
1 medium Yellow onion
1 tbsp minced Ginger root
2 cup Potato (chopped)
2 cup Pumpkin, canned
5 cup Vegetable stock/broth
1 tsp Sea salt, fine


Place a large pot on the stove top over medium heat.  Melt 1 tbsp of coconut oil and then add the apple, onion, ginger, potato, canned pumpkin, and vegetable stock together in the big pot, 

Bring contents to a boil, then allow to simmer for another 30 minutes, or until all the ingredients are soft.

Use an immersion blender to blend all ingredients to form a creamy smooth soup. You can also place contents into a blender or food processor and pulse until smooth.

Add salt to taste.
