1. Place a large pot on the stove top over medium heat. Melt 1 tbsp of coconut oil and then add the apple, onion, ginger, potato, canned pumpkin, and vegetable stock together in the big pot,
2. Bring contents to a boil, then allow to simmer for another 30 minutes, or until all the ingredients are soft.
3. Use an immersion blender to blend all ingredients to form a creamy smooth soup. You can also place contents into a blender or food processor and pulse until smooth.
4. Add salt to taste.
