Apple, Kale and Beet Salad

Ingredients


4 cup Kale (roughly chopped into bite-sized pieces)
1 tsp Extra virgin olive oil
1 cup Beets, raw (diced, canned)
1 large Apple (julienned or chopped)
1/4 cup Walnuts (crushed)
2 tbsp Extra virgin olive oil (dressing)
1 tbsp Apple cider vinegar (dressing)
1 tbsp Dijon mustard (dressing)
57 gm No Sugar Added Apple Sauce (Organic, GF) (dressing)
2 tbsp Water (dressing)
1/4 tsp Sea Salt (dressing)

Instructions


  1. In a large bowl, add the chopped kale and drizzle with extra virgin olive oil. Massage with hands until tender.
  2. Add the beets, apple, and walnuts to the bowl. Combine well.
  3. To prepare the dressing, combine the extra virgin olive oil, apple cider vinegar, dijon mustard, apple sauce, water and sea salt in a small bowl. Whisk until well combined. 
  4. Drizzle the dressing over the salad mixture and toss until lightly coated.
