1. To make the dressing, mix olive oil, balsamic vinegar and fresh mine juice in a small bowl.
2. Pour the dressing over the chopped apple and pears. Top with finely chopped basil leaves.
3. Optional: Let chill for at least 30 mins before serving so the flavours can soak in.
