1 large Apple (chopped)
1 cup Pecans
1/2 cup pitted Dates
1/2 cup Rolled oats, dry
1/4 cup hulled Hemp seeds, shelled
1 1/2 tsp Cinnamon
1/2 tsp Nutmeg, ground
1 tsp Vanilla bean powder
1 tbsp Cinnamon (or more for rolling)
1 tbsp Coconut, shredded, unsweetened (or more for rolling)


  1. Combine apple, pecans, dates, rolled oats, hemp seeds, cinnamon, nutmeg, and vanilla bean powder in a food processor and pulse until dough-like consistency formed.
  2. Use your hands to roll dough into balls. Roll balls of dough in cinnamon, coconut, or your choice of nuts/ seeds if desired, and store in the freezer for at least 30 minutes before serving.
