1. Combine apple, pecans, dates, rolled oats, hemp seeds, cinnamon, nutmeg and vanilla bean powder in a food processor and pulse until dough-like consistency formed.
2. Use your hands to roll dough into balls. Roll balls of dough in cinnamon, coconut or your choice of nuts/ seeds if desired, and store in freezer for at least 30 minutes before serving.
Store in an airtight container in the fridge or freezer for up to 10 days.
