Ingredients


8 medium Apple (6 McIntonish, Jonathan or Gala and 2 Granny Smith)
1/3 cup Raisins, seedless (sultana)
2 tbsp packed Brown sugar
1 tsp Vanilla extract, pure
1 tbsp Cornstarch
12 medium cookies Ginger snap cookie
1 tbsp Canola oil
1/2 tsp Cinnamon
1 tbsp packed Brown sugar
2 tbsp Maple syrup, pure (Or honey)

Instructions


  1. Preheat oven 350 °F (180 °C).
  2. Chop apples into 3/4-inch cubes.
  3. In medium mixing bowl, combine apples, raisins, 2 Tbsp (30 mL) brown sugar, vanilla extract and cornstarch.  Toss gently, yet thoroughly, until cornstarch is dissolved.
  4. Scoop into a 11 x 7-inch (28 x 18-cm) baking dish and set aside.
  5. Place gingersnaps in small plastic resealable bag and seal the bag. Using back of spoon or meat mallet, crush cookies to coarse texture.
  6. Place cookies in small mixing bowl.  Add the canola oil, 1/2 tsp cinnamon, and 1 tbsp brown sugar. Stir to blend thoroughly.
  7. Sprinkle cookie mixture evenly over fruit in baking dish.
  8. Bake uncovered for 45 minutes, or until fruit is bubbling.  Remove from the oven.
  9. Drizzle 2 tbsp maple syrup evenly over the entire crumble.  Let stand for 10 minutes to absorb flavours.

Notes:

If smaller amount is desired, divide recipe in half and bake in a loaf pan.

Store cooled leftovers covered with plastic wrap in refrigerator for up to two days.
