Apple-Raisin Crumble

4 medium Apple (Use a combination of Macintosh, gala, Granny Smith, or honey crisp - unpeeled, chopped into 3/4 inch cubes)
1/4 cup Raisins, seedless (sultana)
2 tbsp packed Brown sugar (I use dark brown sugar)
1/2 tsp Vanilla extract, pure
1/2 tbsp Cornstarch
6 medium cookies Ginger snap cookie
1/2 tbsp Canola oil (or use grapeseed oil)
1/4 tsp Cinnamon
1/2 tbsp packed Brown sugar (I use dark brown sugar)
1 tbsp Honey (or maple syrup)


  1. Preheat oven to 350F.  
  2. In a medium mixing bowl, combine apples, raisins, 2 tbsp brown sugar, vanilla extract and cornstarch, toss gently, yet thoroughly until cornstarch is dissolved.  Place in a loaf pan and set aside.
  3. Place gingersnaps in a small plastic resealable bag.  Using back of spoon or meat mallet, crush cookies to coarse texture.  Place in small mixing bowl and add canola oil, cinnamon, and 1/2 Tbsp brown sugar.  Stir to blend thoroughly and sprinkle evenly over fruit in the loaf pan.
  4. Bake, uncovered for 45 minutes or until fruit is bubbly.  Remove from heat, evenly drizzle honey and let stand for 10 minutes to absorb flavours.  Store cooled leftovers with plastic wrap in refrigerator for up to two days.




Tip:  You can put leftovers in the freezer to store for longer and prevent food spoilage.  

If putting in the freezer - be sure to omit the syrup.  

Add syrup just prior to serving.
