These Homemade Apple Snickerdoodles are always a hit during the holidays. Fresh apples, cinnamon, and soft cookie dough!

Instructions
- Preheat oven to 350F (177C). Line a baking sheet with parchment paper.
- Mix coconut oil, cane sugar, maple syrup, egg, vanilla, and beat or mix until creamy.
- In a separate bowl, mix almond flour, salt, baking soda, and cinnamon.
- Add the dry ingredients to the wet ingredients and stir to mix.
- Gently fold the diced apple into the batter.
- Place the batter in the fridge for one hour (or in the freezer for 15 minutes) to set.
- Meanwhile, combine the remaining cinnamon and cane sugar together on a plate.
- Remove batter from the fridge/freezer and form into 1 tablespoon balls and roll in the cinnamon-sugar mixture.
- Flatten out the balls on the parchment-lined baking sheet.
- Bake for 18-20 minutes and allow the cookies to cool before serving.
