Apple Snickerdoodles

These Homemade Apple Snickerdoodles are always a hit during the holidays. Fresh apples, cinnamon, and soft cookie dough!

Ingredients


4 tbsp Coconut oil
3 tbsp Cane sugar
1/4 cup Maple syrup, pure
1 medium Egg (room temperature)
1 tsp Vanilla extract, pure
2 cup Almond flour/meal, Bob's Red Mill
1/4 tsp Sea Salt
1/2 tsp Baking soda
1/2 tsp Cinnamon
1 medium Apple (diced)
1/4 cup Cane sugar (for coating)
2 tsp Cinnamon (for coating)

Instructions


  1. Preheat oven to 350F (177C). Line a baking sheet with parchment paper.
  2. Mix coconut oil, cane sugar, maple syrup, egg, vanilla, and beat or mix until creamy.
  3. In a separate bowl, mix almond flour, salt, baking soda, and cinnamon. 
  4. Add the dry ingredients to the wet ingredients and stir to mix.
  5. Gently fold the diced apple into the batter.
  6. Place the batter in the fridge for one hour (or in the freezer for 15 minutes) to set.
  7. Meanwhile, combine the remaining cinnamon and cane sugar together on a plate.
  8. Remove batter from the fridge/freezer and form into 1 tablespoon balls and roll in the cinnamon-sugar mixture. 
  9. Flatten out the balls on the parchment-lined baking sheet.
  10. Bake for 18-20 minutes and allow the cookies to cool before serving.
