Ingredients


1 cup Brown rice, medium-grain, dry
1/2 bunch Cilantro (coriander) (chopped)
1/4 medium White onion (diced)
1 clove(s) Garlic (minced)
2 tomato Plum tomatoes (diced)
2 tbsp Olive Oil, Extra Virgin
1 pinch Sea salt, fine (or to taste)

Instructions


  1. In a pan with a lid, over medium low heat, warm olive oil
  2. add garlic to soften, then onion until translucent
  3. add rice and toast slightly, about 2-3 minutes stirring regularly
  4. add tomato and 2 cups of water, cover and adjust heat to high to bring to a boil
  5. reduce heat and add salt, cover and allow to simmer on, low for about 20 minutes or until tender
  6. check to see if rice is cooked and for salt, adjust as necessary
  7. add fresh chopped cilantro, stir and serve
