Artichoke & Tortellini Mason Jar Salads

4 cup Cherry Tomatoes (halved)
2 can (13.5 oz) Artichoke hearts, canned (cut in half)
1 medium Red onion (chopped)
10 tbsp Italian salad dressing (vinaigrette)
114 gm Pasta, tortellini with cheese filling
142 gm Goat feta cheese
2 1/2 cup Arugula
2 1/2 cup Baby spinach


  1. Slice each tomato and artichoke heart in half.  Finely chop the onion.  Crumble the goat cheese into small pieces.  Make ready 5 mason jars.
  2. Separate each ingredient into 5 portions.
  3. Layer each mason jar with one portion of each ingredient in this order:  Italian dressing, tomatoes, onion, artichokes, tortellini, goat cheese, arugula and then spinach.
  4. When ready to eat, shake the jar vigorously and pour into a single serving bowl.

Advanced Preparation

1 - 3 days prior, Pasta, tortellini with cheese filling 114 gm

Cook according to package directions. Let cool to room temperature.


  • Can also shake the jar and eat straight out of the jar.
