1. In a large bowl, place the arugula and thinly sliced apples.
2. To prepare the dressing, mix the olive oil, lemon juice, sea salt and black pepper in a small bowl or measuring cup. Pour the dressing over the greens and toss well.
3. Sprinkle with dried goji berries and sunflower seeds.
