6 cup Arugula
1 medium Apple (diced thin)
3 tbsp Olive Oil, Extra Virgin
1/2 whole lemon(s) Lemon juice
1 pinch Sea Salt
1 dash Black pepper
1/4 cup Dried goji berries (or dried cranberries)
3 tbsp hulled Sunflower seeds (toasted, or your nut of choice)


  1. In a large bowl, place the arugula and thinly sliced apples. 
  2. To prepare the dressing, mix the olive oil, lemon juice, sea salt, and black pepper in a small bowl or measuring cup. Pour the dressing over the greens and toss well. 
  3. Sprinkle with dried goji berries and sunflower seeds.
